Vinification and refinement: Pinot Noir grapes vinified white from antique vines that originated in Burgundy and Champagne. This wine varietal dates back to 1600 in Oltrepo. Cultivating Pinot Noir is difficult and painstaking; vinifying it white even more so, which is why this is so rare.
Pairings: Hor d'oeuvres, light starters, fish or egg based dishes.
